Pork loin and spices chopped up and stirfried with carrots, onions, celery, and jalapenos. Then put on a totilla with hot picante sauce and yogurt.
Those jalapenos packed a powerful punch...I might have to cut them into smaller bits next time. I figured, jalapenos, big whup. (Remembering my NYC days of buying habaneros in the Union Square Greenmarket, and having sore fingers for a few days just from the burn after chopping them up). ~
I probably woulda used zukes instead of peppers (can always squeeze some Sriracha into the stir-fry) and some sweet corn and served it over brown rice drizzled with mushroom gravy and a little sour cream. But it's really hard to go wrong with the basic premise...
I used to make it with sour cream, mikey. But that was before the doctor said "You're lucky your foot was sore enough to make you come back in here. Because your real problem is high blood pressure..." ~
