One of my favorite quick feeds is canned tuna (dolphin safe) cooked with coconut milk and Thai red curry paste. Simple, yet effective... add veggies of choice in an improvisational manner.

Ok, I see the tuna, mango, spinach, avocado and red peppers, but what is the darkish saucy stuff on it?? Soy sauce? Gacky tuna run-off? Duck fat??
I like all of those items, but I'm not sure how they'd meld together...

That is balsamic vinegar on top of olive oil.
These things all meld together wonderfully. I tried it as an experiment, and now I make this two or three times a week.
