Mr. Hedgehog had a long and productive life under prior wolfhound and greyhound management, but the new owner (by right of enthusiasm) has brought in a new program.

A big part of the factors contributing to the Red wine/White wine decision around Mr. Hedgehog is the marinade. Bright citrus-y with thyme and lemon juice would likely call for a white. Richer, earthier marinade from soy and vinegar and perhaps coriander and cayenne would want a red...

Well, one does not wish to be a splitter, but have you considered the source of the Mr Hedgehogs?
Farm raised hedgehogs should be marinated in a red wine based marinade, their taste is too bland otherwise. Wild hedgehogs need a white wine/ vinegar based marinade because of their more gamy taste.
This is particularly true for the Hampton Hedgehogs which gain extra piquancy from the salt grass in that area.
